juice from one huge lemon

1 medium shallot hacked
sherry champaign, or red wine vinegar

1 stalk of fennel/anise one globule with its leaves
1 tablespoon cleaved crisp tarragon leaves
1 tablespoon cleaved crisp cilantro leaves
1 teaspoon slashed fennel leaves (only the fluffy parts)
